A sumptuous nose! Alive with brandy butter, botrytis and sultana compote. A banana sprinkled with brown sugar and gleefully blowtorched followed by suggestions of trail mix, malt loaf and touches of mint tea. Some lozenges and eucalyptus oil in the background as well. Water brings earth after rainfall, bracken and still-warm coal hearths. The arrival on the palate is dense and chocolatey with notes of various cured meats, wet earth, sorrel, dried herbs, turmeric and pears baked in cognac. There is a beautiful and curiously old-school aspect to the sherry. Water lifts the dark fruits and brings out wintry, orange peel and mulling spice notes.


Peat Faerie

The Panel enjoyed the gentle unfurling of aroma in this one. A soft but smoky heather ale note emerges at first, followed by freshly rolled oats, a smouldering hay bail, wet beach pebbles and a hint of buttery marmite toast. Water reveals lemon wax, orange bonbons, smoked teas and sudocreme. The peat is louder in the mouth, a big, bold and leanly muscular wave of drying phenols and hot air from a peat furnace. Some anthracite smoke, a distant puffer exhaust and finally a return to more farmyard qualities with cow sheds, earth and wood embers. A suggestion of green peppercorns in brine and a soothing sootiness. Reduction produces notes of roasted pine cone, frying bacon and freshly ground black pepper along with a meaty, fennel sausage note.''

Peat Faerie Jr

The nose enticed with vanilla, pineapple and white chocolate, while a sweet dustiness reminded one panellist of chalk board dusters. We found a distinct maritime edge, smoked salted butter and old fashioned straw pressed cider.  The peat smoke lead on the palate accompanied by salty peanut brittle, caramelised red apples and watermelon jelly. A splash of water brought toasted (borderline smoky) coconut, while soft minty notes gave way to lightly smoked white fish. The palate was slightly drying at first with a building sweet intensity. Flakes of sea salt were lightly sprinkled onto tropical fruit making for a sweet and savoury crescendo fitting of this regional marriage.
